How to Cook Chicken Spring Rolls

Chicken spring rolls are a delicious and versatile appetizer or snack that can be made with a variety of fillings. Here's a step-by-step guide to making chicken spring rolls:

Ingredients:

For the Filling:

  • 1 cup cooked chicken breast, shredded or finely chopped
  • 1 cup shredded cabbage
  • 1/2 cup grated carrots
  • 1/2 cup bean sprouts
  • 1/4 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

For the Spring Rolls:

  • Spring roll wrappers (you can find these in Asian grocery stores)
  • 1 beaten egg (for sealing the rolls)
  • Vegetable oil (for frying)

Instructions:

1. Prepare the Filling:

  1. Heat the oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Sauté the garlic: Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Cook the vegetables: Add the shredded cabbage, grated carrots, bean sprouts, and green onions. Cook for 3-4 minutes until the vegetables are slightly softened.
  4. Add the chicken: Stir in the cooked chicken, soy sauce, and oyster sauce. Cook for another 2-3 minutes, until the chicken is heated through and well combined with the vegetables.
  5. Season and cool: Add the sesame oil, and season with salt and pepper to taste. Remove from heat and let the filling cool to room temperature.

2. Assemble the Spring Rolls:

  1. Prepare the wrappers: Lay a spring roll wrapper on a clean surface with one corner pointing towards you (diamond shape).
  2. Add the filling: Place about 2 tablespoons of the filling near the corner closest to you. Shape the filling into a log, leaving about an inch of space on each side.
  3. Roll the spring roll: Fold the corner over the filling, then fold in the sides. Continue rolling tightly until you reach the end.
  4. Seal the roll: Brush a little beaten egg on the last corner to seal the spring roll. Repeat with the remaining wrappers and filling.

3. Fry the Spring Rolls:

  1. Heat the oil: In a deep frying pan or wok, heat about 2 inches of vegetable oil to 350°F (175°C).
  2. Fry the rolls: Carefully place a few spring rolls into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes, turning occasionally, until they are golden brown and crispy.
  3. Drain and serve: Remove the spring rolls with a slotted spoon and drain on paper towels. Serve hot with dipping sauce.

4. Make a Dipping Sauce (Optional):

  • Simple Soy Dipping Sauce: Mix 1/4 cup soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon sugar, and some chopped green onions.
  • Sweet Chili Sauce: Store-bought sweet chili sauce is also a great option.

Tips:

  • Non-frying method: For a healthier version, you can bake the spring rolls in the oven at 400°F (200°C) for about 20 minutes, turning halfway through, until they are golden brown and crispy.
  • Vegetarian option: Replace the chicken with tofu or extra vegetables.

Enjoy your homemade chicken spring rolls!
