How to cook 10 - Minute Green Gazpacho and Smoky Quesadilla

10-Minute Green Gaspacho





Ingredients:

  • 2 medium cucumbers, peeled and cut into pieces
  • 1 green pepper, seeded and cut into pieces
  • 1 ripe avocado, peeled and pitted
  • 2 cups fresh spinach
  • 1 clove garlic
  • 1/4 of onion
  • 1 lemon (the juice)
  • 2 cups vegetable broth or cold water
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs (parsley, cilantro or basil) to decorate

Instructions:

  1. Place the cucumbers, green pepper, avocado, spinach, garlic and onion in a blender.
  2. Add the lemon juice, vegetable broth (or water) and olive oil.
  3. Blend everything until you obtain a smooth mixture. If necessary, add more broth or water to reach the desired consistency.
  4. Season with salt and pepper to taste.
  5. Serve immediately in bowls and garnish with fresh herbs if desired.

Smoked Quesadilla

Ingredients:

  • 4 corn or flour tortillas
  • 2 cups grated cheese (cheddar, mozzarella or a blend of cheeses)
  • 1/2 cup shredded chicken or cooked beef (optional)
  • 1 red pepper, cut into thin strips
  • 1 small red onion, cut into thin strips
  • 1 tablespoon olive oil
  • Chipotle sauce or chipotle pepper adobo to taste
  • BBQ sauce to taste
  • Chopped fresh cilantro for garnish
  • Sour cream and guacamole to accompany

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and red pepper and sauté until tender, about 5 minutes.
  2. If you are using chicken or beef, add it to the pan along with the chipotle sauce or adobo. Mix well so that everything is well integrated and heated.
  3. Heat a tortilla in another skillet over medium heat. Spread an even layer of grated cheese over the tortilla.
  4. Add a portion of the chicken (or meat) mixture with onion and pepper on top of the cheese.
  5. Cover with another tortilla and press lightly.
  6. Cook the quesadilla until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
  7. Repeat the process with the remaining tortillas and filling.
  8. Cut the quesadillas into triangles and serve with barbecue sauce, sour cream and guacamole. Garnish with fresh chopped cilantro.
