How to cook 10 - Minute Green Gazpacho and Smoky Quesadilla
10-Minute Green Gaspacho
Ingredients:
- 2 medium cucumbers, peeled and cut into pieces
- 1 green pepper, seeded and cut into pieces
- 1 ripe avocado, peeled and pitted
- 2 cups fresh spinach
- 1 clove garlic
- 1/4 of onion
- 1 lemon (the juice)
- 2 cups vegetable broth or cold water
- 3 tablespoons olive oil
- Salt and pepper to taste
- Optional: fresh herbs (parsley, cilantro or basil) to decorate
Instructions:
- Place the cucumbers, green pepper, avocado, spinach, garlic and onion in a blender.
- Add the lemon juice, vegetable broth (or water) and olive oil.
- Blend everything until you obtain a smooth mixture. If necessary, add more broth or water to reach the desired consistency.
- Season with salt and pepper to taste.
- Serve immediately in bowls and garnish with fresh herbs if desired.
Smoked Quesadilla
Ingredients:
- 4 corn or flour tortillas
- 2 cups grated cheese (cheddar, mozzarella or a blend of cheeses)
- 1/2 cup shredded chicken or cooked beef (optional)
- 1 red pepper, cut into thin strips
- 1 small red onion, cut into thin strips
- 1 tablespoon olive oil
- Chipotle sauce or chipotle pepper adobo to taste
- BBQ sauce to taste
- Chopped fresh cilantro for garnish
- Sour cream and guacamole to accompany
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the onion and red pepper and sauté until tender, about 5 minutes.
- If you are using chicken or beef, add it to the pan along with the chipotle sauce or adobo. Mix well so that everything is well integrated and heated.
- Heat a tortilla in another skillet over medium heat. Spread an even layer of grated cheese over the tortilla.
- Add a portion of the chicken (or meat) mixture with onion and pepper on top of the cheese.
- Cover with another tortilla and press lightly.
- Cook the quesadilla until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
- Repeat the process with the remaining tortillas and filling.
- Cut the quesadillas into triangles and serve with barbecue sauce, sour cream and guacamole. Garnish with fresh chopped cilantro.
