ingredients: 1 large onion, roughly chopped10 cloves of garlic100g chopped ginger100ml vegetable oil2 Scotch Bonnet Peppers, choppedsmall handfuls of curry leaves3 sprigs of thyme4 tablespoons mild curry powder700 g shoulder of mutton or goat, diced400 g can of tomato paste300 ml lamb or beef broth410g can of Borlotti, red or black-eyed Beansjuice of half a lemonbunches of chopped cilantroheated roti (Jamaican flatbread) and rice to servecooking instructions: Place the onion, garlic and ginger in a food processor and puree. Heat the oil in a large ovenproof saucepan (or any suitable saucepan available on the market), add the onion mixture and cook until tender, 5 minutes. Add chilies, curry leaves, thyme, curry powder, and 2 teaspoons salt. Cook for 2–3 minutes, until just beginning to become fragrant.Add the mutton or goat meat to the pan. Cook over medium heat for 5 minutes until meat is browned. Add the chopped tomatoes and the broth. Increase the heat, bring to a boil and simmer for 10 minutes. Reduce heat, cover and cook over low heat for 2 1/2 hours. Remove the lid for the last 30 minutes of cooking. Add the beans to heat and if you want it hotter add more chili. After another 5 minutes, remove from the stove. Add lemon juice and coriander and mix well. Serve with a side of your choice, such as spicy nsima or rice.
